The Best Vegan Gravy Recipe.

As soon as I announced this event, I had a lot of messages asking about gravy! Yes we will have the best gravy on the night. If you can’t wait, here’s the recipe to try for yourself.

Our two secret ingredients – sumptuous medjool dates and a dash of marmite – take this vegan gravy to the next level. It takes about 60 minutes to prep and make, but is definitely worth it. Enjoy.

Ingredients:

– 3 onions, peeled and roughly chopped

– 2 large carrots, roughly chopped

– 2 sticks of celery, chopped

– 3 tablespoons olive oil

– 2 teaspoons sea salt

– 2 bay leaves

– 2 sprigs of fresh thyme

– 2 heaped tablespoons plain flour

– 2 Medjool dates, pitted and roughly chopped

– 1 tablespoon Marmite

– 1 tablespoon tomato purée

– 2 tablespoons red wine vinegar

– 2 tablespoons tamari

– 1 litre vegetable stock

Method:

1. Heat the olive oil in a large saucepan over medium heat. Add the onions, carrots, celery, bay leaves, thyme, and sea salt. Cook for about 20 minutes, stirring occasionally, until the vegetables are browned and have developed a sticky, caramelized texture.

2. Sprinkle in the flour and mix well. Cook for another 5 minutes, stirring continuously.

3. Add the Medjool dates, Marmite, tomato purée, red wine vinegar, and tamari to the saucepan. Continue to cook for an additional 5 minutes, stirring often.

4. Pour in the vegetable stock. Bring the mixture to a boil, then reduce the heat and allow it to simmer gently for 1 hour, stirring occasionally.

5. Once cooked, strain the gravy through a fine sieve, pressing the vegetables to extract all the flavorful liquid.

6. The gravy is ready to be served immediately. Alternatively, it can be made ahead of the big day and stored in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month. Reheat before serving as needed.
